Distinctive Characteristics of pasteurized shell eggs

  • Egg Story Pasteurized Shell Eggs are sealed with an SFA-approved colourless, food-grade coating to prevent contamination and preserve product freshness.
  • Egg Story Pasteurized Egg white is firm, thick and slightly cloudy. Heat during pasteurization causes the protein in the egg white to stick together more tightly, hence presenting a slightly cloudy look.
  • Pasteurization does not cook the eggs; the nutritional value and farm-fresh flavour of the eggs are retained through the process.
